I borrowed this recipe from my sweet friend Madison ,who has some great recipes to share on her Instagram, I just added another ingredient and omitted some of hers.
These “pancakes” are loaded with protein, taste, and the best part of all no gluten or any “bad stuff”!
All you need are a few simple ingredients, a blender, skillet and ta-da… a power punched breakfast that will get you through any day!
- 1 Banana
- 3 Organic Eggs
- 1/3 Cup Canned Pumpkin (no sugar added)
- A bit of Peanut Butter (I just add a hefty knife full)
- 1 Tsp of Pumpkin Pie Spice and Cinnamon
- 1 Tsp of Vanilla Extract
- Coconut Oil (not pictured)
Place in the blender till all ingredients are thoroughly blended. Melt a little coconut oil on the griddle or skillet and pour some of the batter. Make sure the surface is very hot! Flip the pancakes when the bottom is completely cooked, because these aren’t normal “pancakes” it may take awhile for them to cook, just be patient and keep watching them.
Once you flip the second side cooks faster then you are ready to serve! Garnish with a little cinnamon and some fruit and you are ready to eat them!
